Stuffed Aloo Parathas #BreadBakers


When I, visited Himachal for holidays  recently with my friends, these 
luscious Aloo Parathas were an integral part of our meal whether breakfast  or lunch.   

These parathas are stuffed with a succulent mixture of mashed potatoes, green chillies and onions ..,  stilll remember the taste and how we  relished these parathas , which is an indispensable part of North Indian cuisine.   

When  November's theme - root vegetables was shared by our Host  Karen , the first thing that came to my mind was these luscious Aloo Parathas.  
Ingredients
For The Dough
2 Cups  Whole Wheat Flour
1 Tablespoons  Ghee - melted
1/4 Teaspoon Sea Salt

For The Stuffing

5 Medium Potatoes -  boiled , peeled and mashed
1 Medium Onion -  finely chopped 
2 - 3 Green Chillies - finely chopped 
1/4 Teaspoon Sea Salt or to taste
1/4 Teaspoon Turmeric powder
1/4 Teaspoon Sendav Namak
1/2 Teaspoon Heaped Chat Masala powder
2 Tablespoons C
oriander  leaves - finely chopped 

Other Ingredients

Whole Wheat Flour - for rolling
Desi Ghee as required

Method 
For the dough

Combine the whole wheat flour, ghee and salt in a bowl and mix well.
Add enough water and knead into a lightly soft dough. Keep aside covered for at least half an hour.


For the stuffing




In a bowl add the  potatoes, turmeric powder, 
 green chillies, salt, coriander leaves,  chat masala powder, mix well and form  a ball
Divide the stuffing into equal portions and keep aside.

To make the parathas




Divide the dough into equal portions according to the stuffing.




Roll a portion of the dough into a small circle.



Place a little stuffing in the center of the circle.



Bring together all the sides in the center



Close it  tightly



Remove the excess dough from the top and roll it lightly to make a ball .



Roll again into a  slightly thick circle / paratha,  dusting the work surface with a little flour.  



Keep them a side on a paper towel, cover and keep.  In the meantime place the tava / griddle  to heat on low flame.  Like wise prepare the  remaining parathas.  



When the  tava / griddle is heated, place a paratha  and let it cook on low flame till one side is done.  



Then flip and cook this sided too.  



When both side are done then spread  a little ghee of top and the sides and let it cook  until golden brown spots appear on both the sides.



Serve immediately.  Enjoy it fresh with curds and pickle.

Green Garlic Parathas - Flat Bread # Bread Bakers


For  April bread bakers event the theme is Garlic, since I had already made Garlic Knots , decided to make a flat bread with fresh green garlic.  


As many are aware that Green Garlic is available in India only during winters, so if you do not get it, you can still make these yummy flaky Garlicky Parathas, with garlic cloves.  In this paratha,  have used fresh green garlic as well as dried garlic cloves.

Try these parathas , you'll fall in love with them and make them often like I do.

Ingredients:
2 Cups Wheat flour
2 Tablespoons Rice flour
1/2 Teaspoon Salt or to taste
1/2 Teaspoon Cumin powder
1/2 Teaspoon Amchur powder
1/2 Teaspoon Green chilly paste
2 Springs Green Garlic - finely chopped (optional)
6 Cloves Garlic paste
2 Tablespoons Ghee - melted
1 Tablespoon Oil

Method




Take a bowl and add whole wheat flour, green garlic, salt, oil, water and knead to form soft dough. Keep it aside.



In a another bowl, add ghee, salt, rice flour and mix well. To this add cumin powder, green chilly paste, amchur powder, garlic paste and mix well to smooth paste.



Divide the dough into equal portions. Roll out each portion into thin round roti. Spread the garlic mixture evenly over the roti and fold the paratha




fold it like a fan fold (pleates) and press with your plam. 



Then turn it into a round ball.



Using rolling pin, roll the paratha into a thin round flatbread.



Make all the parathas and stack them by dusting flour on each before placing the other one.




Heat a girddle / tawa




Cook the paratha till you can see brown spots on the bottom side flip it over and cook the other side of the paratha. Then with both your hand hold the parathas and the folds will open.



Serve hot with curd or any sabji .  Since this is loved by my family,  we have this for breakfast,  with a hot cuppa of chai....

Masala Roti #BreadBakers


Hearing this name masala roti, you might think it is spicy but let me assure you that this is a flavorful  and flaky roti.

Ingredients
2 Cups Whole wheat flour   

1/2 Teaspoon Carom seeds / Ajwain
1/2 Teaspoon Salt 
1 Teaspoon Chaat masala
1 Teaspoon Red chilly powder 
Ghee as required  
Extra flour for dusting / rolling the rotis
Water as required for kneading

Method


Mix together wheat flour, salt and carom seeds and knead into a dough with sufficient water in to a soft dough. Cover and keep aside  to rest at least for 15 minutes.

Divide the dough into equal portions and roll into balls. Dust with a little dry flour and roll into roti.




Apply little ghee on the roti, sprinkle red chilly powder, chaat masala and dry flour.




Make a cut in the roti from the centre outwards and roll it in the shape of a cone to make layers.



Then twist the cone and roll it into a ball see pic 



Press this cone and roll it back into a roti.



Heat a tawa. 




Place the roti on it and cook till the underside is done. Turn it over and cook on the other side too. Apply a little ghee on both sides and cook till golden.



Remove from tawa, sprinkle some chaat masala, hold the  roti in your hands and crush it lighlty so that the layers 
 separate. Transfer into a serving plate and serve hot with any sabzi or have with a hot cup of tea.

MURTABAK – A Savory Pan Fried Bread of SAUDI ARABIA



In Mena's Cooking Club, this month we are going to make a savory pan fried bread 
of Saudi Arabia called Murtabak .

Murtabak, is a stuffed pancake or pan-fried bread. The name Murtabak in Arabic means "folded". This is a savory pan fried bread filled with minced meat and eggs  which can be served as snack or a complete meal. This bread originated in Yemen, but  also spread to Asian Countries. 



Let's see the ingredients to make this....


Ingredients
For the covering

3 Cups All Purpose flour
1 Teaspoon Salt
1 Tablespoon Oil
1 Teaspoon Sugar
Warm Milk or Water to make a dough

For the Filling

500 Grams Minced Meat (mutton/beef/chicken)
2 Onions – finely chopped
1.1/2 Teaspoon Ginger - Garlic paste
4 Green chilies - finely chopped
2 Teaspoon Meat Masala powder
1.1/4 Teaspoon Chilly Powder
1/2 Teaspoon Turmeric powder
1 Teaspoon Salt
2 Tablespoons Oil
A pinch of Sugar
3 Tablespoon Coriander leaves – finely chopped
4 to 6 Eggs - beaten

For the Pickle

1 Small Cucumber
1 Small Onion
1 Tablespoon  Apple cider vinegar
1 Tablespoon Sugar
1/4 Cup Water
A pinch of Salt

Method
First Let's Make the Pickle

Mix all the ingredients and keep in fridge.

To Make the Filling

To make the filling 
 I, used chicken mince.
 
Mix chili powder, turmeric, meat masala powder and ginger garlic paste with a little water to form a paste.
Heat oil in a pan, add onions and saute till translucent, add masala paste and saute for 2 minutes then add the mince and saute till the colour changes. Add salt mix well cover and cook till the mince is done. Open and check if the mince is cooked and it is completely dry. Keep aside to cool. Add chopped coriander.

Let's Make the Dough

Sift the flour and salt together.

Take the flour, sugar, oil in a bowl and knead with milk (a little at a time) to make a soft and smooth dough. Let it rest covered for 30 minutes .

Let's Assemble the Murtabak
Divide dough into equal parts. Shape it into balls.

Divide the Mince into equal portions depending on the size of murtabak and dough balls.


Take a bowl beat an egg add a portion of filling, mix well.


Flatten each ball with a rolling pin into a medium thick roti. Add the egg filling in the middle of the flattened dough.


Fold the sides

Enclose the filling by wrapping completely.


Spread a little ghee in a frying pan place the murtabak and on medium flame fry one side till golden brown then


Turn it over and cook the other side. Keep frying and turning until both sides are crispy and golden.


Serve the Murtabak


with the pickle and tomato kethcup.... Enjoy!
