Keto Strawberry Microwave Muffin#Improv

This Keto Strawberry Muffin fits perfectly into that sweet spot for a sweet craving. It makes a perfect muffin for quick breakfast or dessert.
This muffin is moist, top it with whipped cream and you have a delicious dessert.
It’s no dissimilar to a mug cake (it is, in fact, a mug cake) and you can make this in your oven or microwave.
Serves 1
Ingredients

30 grams Almond Flour
½ Teaspoon Baking Powder
1 Egg
15 Grams Butter - melted
2 Teaspoons Keto Sweetener
½ Teaspoon Vanilla Extract
¼ Teaspoon Cinnamon powder
20 Grams Strawberries -1 Big chopped

Method
In a bowl, add in the melted butter (or microwave for 15 seconds to melt it), add the Keto sweetener, vanilla extract, and the egg and give it all a good mix till well combined.

Now add your dry ingredients to the bowl - the almond flour, baking powder and cinnamon powder and mix well.

Add in the chopped strawberries and gently fold through the mixture.  
Grease an microwave proof ramekin with butter and pour in the batter. Top with a couple of strawberries.  Microwave on high for 90 seconds. If a toothpick poked through the center comes out clean, your muffin is done.
Serve warm or chilled, depending on your preference.

Keto 2-Minute Protein Bread & A Ham Sandwich#SundayFunday

This is a Microwave Keto 2 Minutes bread, so quick and easy to make. It taste like real bread. 
Add lots of filling for the sandwich, which will eliminate the smell. It's also very filling, makes you satisfied.
This bread turns out beautifully! Lovely crumb, it looks just like wheat bread and taste like real bread! 
Made a Ham Sandwich with this bread, added lots of lettuce, you will love the crunch of lots of lettuce in this sandwich.
Serves One
Ingredients

1 Large Whole Egg
1 Large Egg White Only
18 Grams Raw Whey Protein Powder
1 Tablespoon Psyllium Husk Powder
1 Teaspoon Baking Powder 
¼ Teaspoon Organic Stevia
¼ Teaspoon Salt
A Dash Of Black Pepper Powder
Method
Mix all the ingredients in a Pyrex square dish 5 x 5 inch (13 x 13 cm) or a microwave safe glass bowl.
Microwave for 2 minutes on high powder. The bread is ready!
So how soft and spongy it is!! This bread turns out beautifully! Lovely crumb, it looks just like wheat bread and taste like real bread! 
To Make the Sandwich
Slice the bread into two or three slices (I made two slices) 
slather both sides it with cream cheese, place 3 -4 lettuce leaves, top it with 2 slices of ham, then add 2 slices of tomato, place a slice of cheese
cover it with the other slice of bread.
Filling and yummylicious!!
Wrap it in a sandwich paper, cut it into half. 
Enjoy.. this filling and delicious sandwich. I had this for lunch.

Homemade Celery Salt#Foodieextravaganza

What do you do with the flavorful celery leaves? Put the leftover celery leaves to work, use them in making stock for soup or to make Homemade Celery Salt! It tastes  better and cost less, preservatives free, when you make it home, that too from the celery leaves that we usually do not use.  
You can dry them in a microwave for 5 minutes turning the leaves after every minute or in the  air fryer at 80°C for 20  to 25 minutes. I make these every year, in winter, when celery is darn cheap and seen in abundance.  I dried celery leaves in the microwave as well as air fryer.  
Makes 2/3 Cup
Ingredients
½ Cup Dried Celery Leaves
¼ Cup Sea Salt

Method

I got a big  bunch of celery ( used even the yellow leaves, because they too are full of flavor).  
Remove all  the leaves, wash them well and then dry them on a cloth till the leaves are absolutely free of any moisture.  
Place them in the  air fryer basket at 80°C for 20 to 25 minutes or until dried, but not browned.  Let the  cool completely.  
Transfer them to a spice grinder along with the sea salt, just  pulse the grinder two or three times or  until evenly ground and well combined.  
Store it in a  small air-tight  jar or container and use whenever required.

Shrimp Stuffed Potatoes#FishFriday

Taking  stuffed  baked potatoes and piling it high with  shrimps and mayo, makes a delicious light dinner and is also a best way to use up leftovers from the fridge.
Ingredients
4 Small Potatoes
8 Large Prawns / Shrimps - cleaned and chopped
1 Small Onion - finely chopped
2 Cloves Garlic - minced
1 Baby Carrot - finely chopped
1 Tablespoon Flat Parsley - finely chopped
1 Tablespoon Celery - finely chopped
1 Teaspoon Oil
1 Teaspoon Black pepper powder
Salt to taste
4 -5 Tablespoons Mayonnaise - Homemade

Method

Wash and scrub the potatoes and place them in a bowl with a tablespoon water and microwave on high for 3 minutes.
When cooled slightly take them and place them in the air fryer basket and air fryer them at 200 degrees C for 20 minutes. Cool them completely. 

 Then cut each potato into two pieces. With a small spoon Gently scoop out the potato.  Keep the scooped potato keep aside.
To make the filling
In a pan heat the oil add the garlic and onion, saute till softened then add the carrot, stir fry for a minute now add salt, pepper, parsley, celery and the prawns and saute till the prawns are cooked, add in the scooped potato and mix well. Take off flame and cool the mix. 
When cooled mix in mayonnaise and pile it on the potato and enjoy.

Quick And Easy Milk Pedas In Microwave - 3 Ingredients


I am, sharing a quick and easy method of making peda. That is with milk powder and condensed milk. Condensed milk gives the pedas, a nice chewy texture. Since these are so easy and quick to make.

I am sure you will never hesitate to make this detectable pedas whenever the need arises, be it Rakshabandan or any other festival or offering. It takes just 3 minutes are they are done. Can make them in different shapes you desire.
Makes around 10 - 15 depending on the size and shape.

Ingredients
1 Cup + 2 Tablespoon Milk powder
3/4 Cup Sweetened Condensed milk
1/4 Teaspoon Cardamom powder
1.1/2  Tablespoon Butter
Extra Ghee / Oil for greasing  as required

Method
Take butter in a microwave safe bowl and microwave it for 15 to 20 seconds on high powder till just melted .
Whisk the butter a little, add condensed milk and milk powder.
Mix well , ensure that there is no lumps.

Microwave it for 1 minute on high power.
Stir with a spatula, add cardamom powder and mix well.
Again microwave it for 1 more minute, stirring once in between.
Depending on the microwave, you may need to microwave for another 20-30 seconds more.

If you notice air bubbles appearing all over, then its done.
Remove for microwave. Mix it well.
Let it  cool for 3 minutes .
Grease your hand and a plate with ghee/oil.
Transfer the mixture from the bowl to greased plate.
Gently knead the mixture and make a dough.
Now divide into equal size balls (  I used a spoon ).
Grease your palm with oil or ghee then give them desire shape .  These are packed  and ready.  Enjoy  !!

My Notes
Saffron can be added to it -  soaked  it in a tablespoon of  warm milk and can be added to the mixture.

Milk Chocolate Mug Cake - Microwave

Have a craving for  cake, then this is for you.  This is a quick and easy microwave recipe.  Try this and you will love this moist and chocolaty cake.  

Ingredients
30 Grams Butter or 1.1/2 Tablespoons heaped - see notes
40 Grams Milk Chocolate(any brand) -  break into pieces
1 Egg
2 Tablespoons Level Sugar powdered
1/4 Teaspoon Vanilla Essence
5 Level Tablespoons All Purpose Flour
1/2 Teaspoon Level Baking powder

Method

In a mug melt the butter and chocolate together, microwave on high power for 30 seconds. Use a hand whisk and whisk it till smooth. Keep it aside to cool.
In the meantime gather rest of the ingredients
Mix the flour, sugar and baking powder well.

In a another mug or bowl, whisk an egg along with the essence well. Add all the dry ingredients and whisk till well combined. Now add the melted chocolate mixture and mix well. Pour this batter into a large mug.

Place it in the microwave on high power for a minute and twenty to twenty five  second's, after a minute and 20 seconds pause the microwave and check  if done by inserting a skewer,  if comes out clean then it's done or else microwave again for 5 seconds more.

Let it cool for a minute or two.  Pipe a little whipping cream and sprinkle grated chocolate.  Enjoy with a tea or coffee. 


This is a delicious, quick  and moist cake for you and your little ones whenever they crave for cakes.

My Notes
Reserved  a small piece to grate for the topping. You can add all the chocolate and make it more chocolaty and gooey ..mmm yum. 


Make this in a large mug or two medium size mug. Since it will rise and then overflow.

The timing will change accordingly so keep a check

The butter should be softened .. the consistency like when you  spread it on a slice of bread.

You can also unmold this cake and cut into slices.  Just run a knife around the sides of the mug and mold.
