Besan Almond Ladoo


These ladoo's are my hubby's favorite, he simply loves them. I have already posted a recipe of the these ladoo's , but, this is with almond meal, it has a nutty taste.
Ingredients

3/4 Cup Ghee
2 Cups Chickpea Flour/Besan

1/2 Cup Ground Almonds/Almond meal
1/2 to 3/4 Cup Caster sugar
1/2 Teaspoon Cardamom powder


Method
Heat the ghee. Stir in the chickpea flour and cook over low heat until the chickpea flour is toasted and the mixture smells fragrant, about 10 to 15 minutes. The mixture should be pasty, not powdery. Remove the mixture from the heat and cool slightly. Add the ground almonds, caster sugar, ground coconut, and ground cardamom to the pan and mix thoroughly. Taste for sugar, add according to the sweetness you require. While the mixture is warm, shape it into balls.
Store the ladoo's in an airtight container and they can be eaten immediately, but taste better after several hours.

Chocolate Coffee Ice Cream Sandwich#Foodieextravaganza

For Foodie Extravaganza this month our host is Camilla of Culinary Adventures, challenged us to created Ice Cream Sandwiches.  Making ice cream sandwiches is easy, but, to keep them frozen, even to take a pic is a real challenge, since my city weather conditions do not permit it, the ice cream starts to melt immediately, my great worry was that the cookies will turn soggy.  But this recipe I, can guarantee that they will not turn soggy even if you freeze them, but the use of vegetable shortening is a must. They are crisp and delicious.
Makes about 18 to 20 Sandwich Cookies depending on the size of the cutter
Ingredients
2 Tablespoons Melted Chocolate 
100 Grams Unsalted Butter
100 Grams  Vegetable Shortening
15 Grams Condensed Milk 
100 Grams  Caster Sugar 
2 Egg Yolks Only 
40 Grams  Almond Meal 
20 Grams Cocoa powder 
340 Grams All purpose flour
20 Grams Corn Flour 
2 Grams Salt

Method 
Sieve the flour, cocoa, salt, keep aside.
Melt the chocolate in the microwave and keep aside. 
Beat the butter and the vegetable shortening till creamy add half the melted chocolate and beat add sugar and beat. Now add egg yolks one at time and beat till both are incorporated. Add the sieved flour, almond meal and knead it lightly to make a dough.  Place this in a cling wrap and make it into a square and refrigerate it for 30 minutes.  Divide into two equal parts and roll between two parchment sheets.  
Cut with a cookie cutter, place them in a baking tray. Bake in a preheated oven at 180 C for 12 to 15 minutes.  
Cool them in a cooling rack completely and store it airtight container.
Quick & Easy Coffee Ice Cream
Ingredients
75 Grams Condensed Milk
100 Grams Fresh Cream
1 Tablespoon Instant Coffee
2 Tablespoons Hot Milk

Method
Chill the Condensed Milk, fresh Cream for 3 hour's in the freezer. The beat it for a good 15 minutes till it starts to become fluffy. Add the coffee mixture and cling wrap it along with the beater in the freezer for another 30 to 45 minutes.
Remove it from the freezer and place this on ice filled bowl and again beat till it doubles in volume and is fluffy.
Pour this into a air tight container and cling wrap it. Freeze it overnight or till set.
Delicious ice cream is ready.  
To Assemble The Cookies

Take the ice cream and  cut it with the same sized mold as the cookies. 
Take one cookie, place the ice cream and sandwich with another cookie.  Like wise make all.  Place it in a airtight container and freeze them until the ice cream hardens for at least  4 hours.  
Enjoy these chilled. Mine were melting since the weather here is hot.  The great thing about these ice cream cookies are that even though you freeze them they do  not soften.  We enjoyed them as a dessert after our meal.

Almond Chicken Soup#Soupswappers

Its time to share our recipe with Soup Saturday Swappers today for which I am the host. The theme for this month is "Almonds".
I love this nut for all its nutrition and other benefits. I especially crave for the salted ones, these are tempting and can munch on them non stop.. really they are so addictive. If you can get a bag of these you must buy them. Coming to this soup I, have used the unsalted ones.. made Homemade Almond Meal, easy and simple to make.

Serves 5
Ingredients 

1 Chicken Breast - cubed
6 Cup Chicken Stock   OR
6 Cups Water + 1 Big Chicken Stock Cube
4 Tablespoons All Purpose Flour
2 Tablespoons Butter
3 Tablespoons Heaped 
Homemade Almond Meal 
½ Teaspoon Salt  or to taste
1 Cup Milk
½ Teaspoon Black or White Pepper Powder or to taste
Bread Croutons as required for serving
2 Tablespoons Fresh Cream for garnishing

Method
Melt butter in a pan, add chicken pieces till it turns pink to white. 
Then add flour with pepper , salt and almond meal, saute for 2  minutes, add stock, cook till chicken tender and soup thick, keep stirring , remove soup from the flame, add milk, sugar, salt, stir well and keep it again on medium low, cook for 5 minutes.  
Just before serving drizzle with cream.
Enjoy this soup with bread croutons.

Fig / Anjeer Milk Shake #FoodieExtravaganza

Dried Figs or Fresh Figs are very commonly available almost everywhere and this is widely consumed in India and other countries. Figs, whether fresh or dried, are rich in powerful antioxidants.The fig trees can live up to 100 years, that why many people in India touch their head to this tree , so that, they too will have long and healthy life. 
Figs have a unique taste and texture. They are sweet and chewy. The smoothness of the fruit and the crunchiness of its seeds make a beautiful combination to eat. Dried figs are available throughout the year whereas fresh figs are available in summer.

Here the weather is so hot and sticky, this drink is perfect to cool your body. I,  have not added any extra sugar for sweetness. Wanted the natural taste and sweetness of the Figs. This is a diabetic friendly drink. Can add a tablespoon or more of caster sugar according to your taste.

November 1-7th is National Fig Week. Our Host Camilla M. Mann - Event for Foodie Extravaganza {Party},  asked us to share recipes that celebrate the mighty fig ( fresh or dried ).

Serves 2
Ingredients

500 Ml Millk
6 Pieces Dried Figs / Anjeer
1 Tablespoon Heaped Almond meal - Homemade

1 Cup Ice cubes

Method

Wash and then cut the figs into small pieces. Soaked these in 1 cup warm milk for 2 to 3 hours.
In a blender jar, add figs along with the milk in which it was soaked in and blend it into smooth paste. Then add the remaining cold milk , ice cubes and almond meal blend it again.
When the mixture becomes into thick and smooth consistency then transfer it into a  serving glass.
Serve the Fig / Anjeer Milk Shake in a glass and top with anjeer pieces and enjoy chilled.
